Preparation Steps
  1. Wash the sweet potatoes thoroughly and peel if desired. Cut into wedges of even thickness, about a half-inch wide, and set aside.
  2. In a large mixing bowl, toss the sweet potato wedges with olive oil, minced garlic, chopped rosemary, salt, black pepper, and optional smoked paprika until well coated.
  3. Preheat your air fryer to 400°F (200°C) for about 3 minutes.
  4. Place the seasoned sweet potato wedges in the air fryer basket in a single layer, allowing space between each piece. Air fry at 400°F for 8 to 10 minutes, flipping halfway through.
  5. Once crispy and golden brown, remove from the air fryer and serve hot, garnished with additional rosemary or parmesan.
