- Thoroughly wash and peel the sweet potatoes. Slice them into even fry shapes, about 1/4 inch thick.
- Soak the cut fries in a bowl of cold water for 30 minutes to remove excess starch.

- In a large bowl, toss the dried fries with cornstarch until lightly coated.
- Drizzle with olive or avocado oil and sprinkle in seasoning. Toss until fully coated.
- Preheat the air fryer to 380°F for 5 minutes.
- Place the fries in a single layer in the air fryer basket and cook for 15-20 minutes, shaking every 5 minutes.
- Check for desired crispiness and cook for an additional 2-3 minutes if needed.
