  • 1 cup Broccoli Florets or snap peas
  • 1 cup Carrots sliced thinly
  • 1 cup Bell Pepper any color, sliced
For the Sauce
  • ¼ cup Soy Sauce adjust to taste
  • 1 tablespoon Cornstarch mix with water to avoid lumps
  • 2 tablespoons Water to dissolve cornstarch
For Serving
  • 4 cups Cooked Rice or quinoa, cauliflower rice

Preparation Steps
  1. In a large skillet or wok, heat over medium-high heat, and add ground beef. Cook for about 5-7 minutes until browned and no longer pink.
  2. Add vegetable oil to the skillet, swirling to coat. Toss in chopped onion and sauté for about 5 minutes until soft and translucent.
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Add broccoli florets, sliced carrots, and sliced bell pepper to the skillet. Cook for 5-7 minutes until vegetables are tender-crisp.
  5. In a bowl, whisk together soy sauce, cornstarch, and water until smooth.
  6. Pour prepared sauce over the beef and vegetable mixture. Stir for about 2 minutes until sauce thickens.
  7. Serve stir-fry over cooked rice or alternative.
