Method
 

Step-by-Step Instructions
  1. In a medium skillet, melt 1 tablespoon of butter over medium heat. Add the diced apples, cinnamon, and maple syrup. Cook for 6-8 minutes until the apples are tender and the syrup has thickened.
  2. On a clean surface, take one tortilla and spread 2 tablespoons of cream cheese or 1/4 cup of shredded cheddar on one half. Spoon a portion of the warm apple filling over the cheese and fold the tortilla in half.
  3. In a clean skillet, melt another tablespoon of butter over medium heat. Place the folded quesadilla in the skillet and cook for 2-3 minutes until golden brown and crispy. Flip and repeat on the other side.
  4. Remove the quesadilla from the skillet and let it cool for a minute. Slice it into wedges and serve warm, optionally with honey or Greek yogurt.
