Step-by-Step Instructions
  1. Shred 1 pound of cooked chicken and soak 1/2 of a red onion in cold water for 10 minutes. Drain well.
  2. In a large mixing bowl, combine shredded chicken, drained red onion, chopped cilantro, and cubed avocado. Fold together.
  3. Blend 1/2 cup of cottage cheese, 1/4 cup mayonnaise, 1/2 teaspoon onion powder, and the juice of one lime until smooth.
  4. Mix the dressing with the chicken salad until evenly coated. Chill for at least 30 minutes in the refrigerator.
  5. Thinly slice an English cucumber into 1/8 inch-thick rounds and pat dry with a paper towel.
  6. Spread whipped cream cheese onto each cucumber slice. Top with 2 tablespoons of chicken salad and roll tightly.
  7. Slice each roll into bite-sized pieces and arrange on a platter. Sprinkle with everything bagel seasoning and drizzle with chipotle hot sauce if desired.
