Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Cut off the tops of the bell peppers and remove seeds. Rinse and pat dry. Place peppers in a baking dish.
  3. In a large bowl, combine chicken, buffalo sauce, cream cheese, half of the cheddar, garlic powder, and onion powder. Mix until creamy.
  4. Stuff the peppers with the mixture, pressing down to pack them tightly.
  5. Sprinkle remaining cheddar over the stuffed peppers. Add blue cheese if desired.
  6. Cover with foil and bake for 25 minutes. Then remove foil and bake for an additional 10-15 minutes until cheese is bubbly.
  7. Allow to cool for 5 minutes before serving. Garnish with parsley or green onions.
