Preparation
- Preheat the oven to 375°F (190°C).
- Cut off the tops of the bell peppers and remove seeds. Rinse and pat dry. Place peppers in a baking dish.
- In a large bowl, combine chicken, buffalo sauce, cream cheese, half of the cheddar, garlic powder, and onion powder. Mix until creamy.
- Stuff the peppers with the mixture, pressing down to pack them tightly.
- Sprinkle remaining cheddar over the stuffed peppers. Add blue cheese if desired.
- Cover with foil and bake for 25 minutes. Then remove foil and bake for an additional 10-15 minutes until cheese is bubbly.
- Allow to cool for 5 minutes before serving. Garnish with parsley or green onions.
