Method
 

Step‑by‑Step Instructions
  1. In a small bowl, combine 3 tablespoons of soy sauce with 1 tablespoon of water, stirring until smooth. Set the sauce aside.
  2. In a mixing bowl, whisk together 4 large eggs with a sprinkle of salt and a pinch of white pepper until uniform.
  3. Heat a medium non-stick skillet over low to medium heat and add a touch of oil. Pour the whisked eggs into the skillet and stir until just set, about 2-3 minutes.
  4. Using the same skillet, increase the heat to medium and add the diced Spam. Sear the Spam for 1-2 minutes on each side.
  5. Sprinkle about 1 tablespoon of sugar over the crispy Spam, tossing to coat evenly. Pour in the prepared glazing sauce and simmer for about 3-4 minutes.
  6. To serve, place a scoop of cooked white rice on each plate, then layer the caramelized Spam and scrambled eggs on top. Finish with fried garlic, furikake, and green onions.
