Step‑by‑Step Instructions
- In a small bowl, combine 3 tablespoons of soy sauce with 1 tablespoon of water, stirring until smooth. Set the sauce aside.
- In a mixing bowl, whisk together 4 large eggs with a sprinkle of salt and a pinch of white pepper until uniform.
- Heat a medium non-stick skillet over low to medium heat and add a touch of oil. Pour the whisked eggs into the skillet and stir until just set, about 2-3 minutes.
- Using the same skillet, increase the heat to medium and add the diced Spam. Sear the Spam for 1-2 minutes on each side.
- Sprinkle about 1 tablespoon of sugar over the crispy Spam, tossing to coat evenly. Pour in the prepared glazing sauce and simmer for about 3-4 minutes.
- To serve, place a scoop of cooked white rice on each plate, then layer the caramelized Spam and scrambled eggs on top. Finish with fried garlic, furikake, and green onions.

Notes
Keep the heat low when scrambling the eggs to ensure they stay creamy. Store leftovers in an airtight container for up to 3-4 days.
