- In a large skillet, heat olive oil over medium heat. Add ground beef, breaking it apart. Cook for 5-7 minutes until browned.
- Stir in chopped onion and minced garlic. Cook for 2-3 minutes until softened. Sprinkle in taco seasoning, adding water to bind. Simmer for 3-4 minutes until thickened.
- Lay one tortilla flat. Spoon seasoned ground beef mixture onto half of the tortilla. Sprinkle shredded cheese over the filling. Fold tortilla over.
- In a nonstick skillet, drizzle olive oil over medium heat. Cook the folded quesadilla for 2-3 minutes until golden. Flip and cook for another 2-3 minutes until cheese melts.
- Remove from skillet, let cool slightly, and slice into wedges. Serve hot with optional toppings.

For crispy quesadillas, use freshly shredded cheese and adjust oil as needed when cooking. Store leftovers in an airtight container for up to 3 days.
