- Begin by bringing a large pot of salted water to a rolling boil over high heat. Add the rotini pasta and cook according to the package instructions until it reaches an al dente texture, about 8-10 minutes. Once cooked, drain the pasta thoroughly in a colander and set it aside.
- In the same pot, heat a splash of oil over medium heat. Add the ground beef, breaking it apart with a spatula, and cook until it’s browned and no longer pink, about 5-7 minutes. Drain any excess fat.
- Sprinkle the taco seasoning evenly over the browned beef. Pour in a splash of water, stirring to combine. Cook for another 2-3 minutes until the water evaporates and the beef is fully coated in spices.
- Add the drained rotini pasta back into the pot with the seasoned beef. Pour in your choice of salsa, tossing everything together gently for about 2 minutes.
- Sprinkle the cheese over the pasta mixture and stir until it’s fully melted and creamy, about 2-3 minutes. Remove from heat.
- Dish out portions onto plates. Sprinkle with extra cheese, fresh cilantro, and sliced green onions. Add a dollop of sour cream if desired.
