  • 1 packet Taco Seasoning homemade or store-bought
  • 1 cup Salsa use your favorite variety
For the Cheesy Goodness
  • 2 cups Shredded Mexican Cheese any blend or lactose-free option
For the Garnish
  • 1/4 cup Fresh Cilantro chopped
  • 1/4 cup Sliced Green Onions for extra crunch
  • 1/2 cup Sour Cream for serving

Method
 

Step-by-Step Instructions
  1. Begin by bringing a large pot of salted water to a rolling boil over high heat. Add the rotini pasta and cook according to the package instructions until it reaches an al dente texture, about 8-10 minutes. Once cooked, drain the pasta thoroughly in a colander and set it aside.
  2. In the same pot, heat a splash of oil over medium heat. Add the ground beef, breaking it apart with a spatula, and cook until it’s browned and no longer pink, about 5-7 minutes. Drain any excess fat.
  3. Sprinkle the taco seasoning evenly over the browned beef. Pour in a splash of water, stirring to combine. Cook for another 2-3 minutes until the water evaporates and the beef is fully coated in spices.
  4. Add the drained rotini pasta back into the pot with the seasoned beef. Pour in your choice of salsa, tossing everything together gently for about 2 minutes.
  5. Sprinkle the cheese over the pasta mixture and stir until it’s fully melted and creamy, about 2-3 minutes. Remove from heat.
  6. Dish out portions onto plates. Sprinkle with extra cheese, fresh cilantro, and sliced green onions. Add a dollop of sour cream if desired.
