- Preheat your oven to 350°F (175°C) and grease a standard loaf pan with olive oil or non-stick spray.
- In a medium mixing bowl, whisk together 1.5 cups of all-purpose flour, ⅓ cup of cocoa powder, 1 tsp of baking soda, ½ tsp of kosher salt, and 1 tsp of espresso powder.
- In a stand mixer or a large mixing bowl, combine ⅓ cup of olive oil and ½ cup each of brown sugar and granulated sugar. Beat until smooth and creamy, then add 2 large eggs one at a time until blended. Add 1 tsp of vanilla extract, ½ cup of sour cream, and 2 large mashed ripe bananas.
- Gently fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
- Prepare 1 cup of chocolate chips by dredging them in flour and fold into the batter.
- Pour the batter into your greased loaf pan and decorate with extra banana slices or reserved chocolate chips if desired.
- Bake for 55-65 minutes, checking for doneness with a toothpick.
