Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a standard loaf pan with olive oil or non-stick spray.
  2. In a medium mixing bowl, whisk together 1.5 cups of all-purpose flour, ⅓ cup of cocoa powder, 1 tsp of baking soda, ½ tsp of kosher salt, and 1 tsp of espresso powder.
  3. In a stand mixer or a large mixing bowl, combine ⅓ cup of olive oil and ½ cup each of brown sugar and granulated sugar. Beat until smooth and creamy, then add 2 large eggs one at a time until blended. Add 1 tsp of vanilla extract, ½ cup of sour cream, and 2 large mashed ripe bananas.
  4. Gently fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
  5. Prepare 1 cup of chocolate chips by dredging them in flour and fold into the batter.
  6. Pour the batter into your greased loaf pan and decorate with extra banana slices or reserved chocolate chips if desired.
  7. Bake for 55-65 minutes, checking for doneness with a toothpick.
  8. Cool in the pan for 20 minutes and then transfer to a wire rack.
