- Bring a large pot of salted water to a boil. Add the fresh broccoli and cauliflower florets, blanching for about 3–4 minutes. Transfer to an ice bath to halt cooking.
- In a large mixing bowl, combine the cottage cheese, shredded cheddar cheese, garlic powder, salt, black pepper, and paprika. Mix until smooth.
- Gently fold the blanched broccoli and cauliflower into the cheese mixture.
- Preheat oven to 375°F (190°C). Grease a 9x9 inch baking dish and transfer the cheesy vegetable mixture into it.
- In a small bowl, combine breadcrumbs with olive oil. Sprinkle evenly over the top of the mixture.
- Bake for about 25–30 minutes until golden brown and bubbly.
