Ingredients
  

For the Lasagna
  • 12 oz Lasagna Noodles Cooked al dente
  • 2 cups Shredded Cooked Chicken Rotisserie chicken works well
  • 3 cups Fresh Baby Spinach Or use thoroughly drained frozen spinach
For the Creamy Sauce
  • 15 oz Ricotta Cheese Can substitute with cottage cheese
  • 4 tbsp Unsalted Butter Salted butter can be used if salt content is adjusted
  • 1/4 cup All-Purpose Flour Thickens the sauce
  • 3 cups Whole Milk Ensure room temperature for best results
  • 2 cloves Minced Garlic Fresh is best
  • 1 tsp Salt To taste
  • 1 tsp Black Pepper To taste
For the Toppings
  • 2 cups Shredded Mozzarella Cheese For that gooey texture
  • 1/2 cup Grated Parmesan Cheese For finishing
  • 1/4 cup Chopped Fresh Parsley Optional garnish

Method
 

Preparation Steps
  1. Preheat oven to 375°F (190°C) and cook lasagna noodles in salted water until al dente, about 8-10 minutes. Drain and lay flat.
  2. In a saucepan, melt butter over medium heat, add minced garlic and sauté for 1 minute. Whisk in flour until smooth, then gradually whisk in milk and cook until thickened, about 5-7 minutes. Season with salt, pepper, and half of the Parmesan.
  3. In a bowl, combine ricotta cheese, spinach, salt, and pepper until well mixed.
  4. Grease a baking dish, start layering with white sauce, noodles, half ricotta-spinach mixture, chicken, mozzarella, and more white sauce. Repeat layers, ending with noodles and topping with remaining white sauce, mozzarella, and Parmesan.
  5. Cover with foil and bake for 25 minutes, then uncover and bake for an additional 15 minutes until golden and bubbling.
  6. Let the lasagna rest for 10 minutes, garnish with parsley, and serve.
