- In a small mixing bowl, whisk together olive oil, lemon juice, dried oregano, maple syrup or honey, minced garlic, and a pinch of salt and pepper. Set aside.
- Slice cucumbers into half-moon shapes and Roma tomatoes into bite-sized chunks. Thinly slice the red onion and halve the black olives.
- In a large salad bowl, combine the chopped cucumbers, tomatoes, red onions, and black olives. Toss gently.
- Pour the prepared vinaigrette over the salad ingredients and toss gently to coat.
- Sprinkle crumbled feta cheese over the top of the salad and garnish with fresh herbs if desired.
