Ingredients
  

For the Salad
  • 2 pcs Cucumbers try Persian or English cucumbers for a milder taste
  • 2 pcs Roma Tomatoes ensure ripeness for full flavor
  • 0.5 cup Red Onions slice thinly for a subtler onion taste
  • 0.5 cup Black Olives halve and drain to avoid extra moisture
  • 1 cup Feta Cheese crumble by hand for perfect texture
For the Vinaigrette
  • 0.25 cup Olive Oil use extra virgin for superior flavor
  • 0.25 cup Lemon Juice freshly squeezed is best
  • 1 tsp Dried Oregano fresh is a fine substitute
  • 1 tbsp Maple Syrup or Honey omit for a tart vinaigrette
  • 1 clove Garlic minced fresh for maximum aroma

Method
 

Instructions
  1. In a small mixing bowl, whisk together olive oil, lemon juice, dried oregano, maple syrup or honey, minced garlic, and a pinch of salt and pepper. Set aside.
  2. Slice cucumbers into half-moon shapes and Roma tomatoes into bite-sized chunks. Thinly slice the red onion and halve the black olives.
  3. In a large salad bowl, combine the chopped cucumbers, tomatoes, red onions, and black olives. Toss gently.
  4. Pour the prepared vinaigrette over the salad ingredients and toss gently to coat.
  5. Sprinkle crumbled feta cheese over the top of the salad and garnish with fresh herbs if desired.
