Ingredients
  

For the Soup Base
  • 1 lb Ground Beef or ground turkey/plant-based meat
  • 1 cup Chopped Yellow Onion can substitute with shallots or sweet onion
  • 3 cloves Minced Garlic fresh preferred, can substitute with 1/4 tsp garlic powder
  • 28 oz Crushed Tomatoes
  • 14.5 oz Petite Diced Tomatoes
  • 6 oz Tomato Paste
  • 12 oz Tomato Sauce
For Seasoning
  • 1.5 tsp Dried Basil or Italian seasoning
  • 0.5 tsp Fennel Seeds optional, omit if not preferred
  • 1 tsp Granulated Sugar can substitute with honey or maple syrup
  • 1 tsp Italian Seasoning
  • 1.5 tsp Salt adjust according to taste
  • 0.25 tsp Black Pepper increase for more spice
For the Broth and Pasta
  • 3 cups Beef Broth or vegetable broth for vegetarian option
  • 20 oz Cheese-Filled Tortellini can substitute with any pasta
For Topping
  • 6 tbsp Shredded Parmesan Cheese or Pecorino Romano/nutritional yeast
  • 4 tbsp Fresh Parsley optional, substitute with basil or omit

Instructions
  1. Brown the ground beef in a medium skillet over medium heat, cooking for approximately 7-10 minutes. Drain excess fat after cooking.
  2. Add the chopped yellow onion and minced garlic to the skillet, sautéing for 1-2 minutes until onions are translucent.
  3. Transfer the cooked beef and vegetables to the crockpot. Add beef broth, crushed tomatoes, diced tomatoes, tomato paste, tomato sauce, granulated sugar, salt, black pepper, and dried herbs; stir to combine.
  4. Cover the crockpot and cook on high for 3-4 hours or low for 5-7 hours.
  5. About 20 minutes before serving, add cheese-filled tortellini to the crockpot and increase the heat to high. Stir gently and cook until tender.
  6. Serve the soup ladled into bowls, garnished with grated Parmesan cheese and chopped parsley.

Notes

Brown the beef well and skim off excess grease for a lighter soup. Adjust seasonings to your preference, and add tortellini last to prevent overcooking. Experiment with add-ins like spinach or zucchini.
