For the Optional Glaze
  • 1 cup Powdered Sugar a sugar alternative can be used
  • 2-3 tablespoons Heavy Whipping Cream or milk for lighter option

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, use an electric mixer to beat the butter and sugar until light and fluffy, about 2-3 minutes. Add eggs and vanilla, mixing until combined.
  3. In a separate bowl, whisk together flour, cream of tartar, baking soda, and salt. Gradually add to the wet mixture, stirring until just combined.
  4. Fold in the chopped Pop Tarts and sprinkles until evenly distributed.
  5. Scoop 2 tablespoons of dough for each cookie, roll into balls, and place 2 inches apart on the baking sheet. Optionally top with extra Pop Tart pieces.
  6. Bake for 11-12 minutes until golden around edges but soft in the center. Remove and cool for 5 minutes before transferring to a wire rack.
  7. For the optional glaze, mix powdered sugar with heavy whipping cream until smooth.
  8. Dip the tops of cookies into the glaze or drizzle it over. Sprinkle with extra sprinkles while glaze is wet.
  9. Serve with a glass of milk and enjoy!
