- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, use an electric mixer to beat the butter and sugar until light and fluffy, about 2-3 minutes. Add eggs and vanilla, mixing until combined.
- In a separate bowl, whisk together flour, cream of tartar, baking soda, and salt. Gradually add to the wet mixture, stirring until just combined.
- Fold in the chopped Pop Tarts and sprinkles until evenly distributed.
- Scoop 2 tablespoons of dough for each cookie, roll into balls, and place 2 inches apart on the baking sheet. Optionally top with extra Pop Tart pieces.
- Bake for 11-12 minutes until golden around edges but soft in the center. Remove and cool for 5 minutes before transferring to a wire rack.
- For the optional glaze, mix powdered sugar with heavy whipping cream until smooth.
- Dip the tops of cookies into the glaze or drizzle it over. Sprinkle with extra sprinkles while glaze is wet.
- Serve with a glass of milk and enjoy!
