Making the Churros
- Cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add vanilla extract, flour, and salt. Mix until just combined and chill the dough for 30 minutes.
- Roll chilled dough into 1-inch balls, flatten them, and pipe cheesecake filling into the center.
- Fold edges over to seal tightly and chill for another 15 minutes.
- Heat oil to 350°F and fry churros for 2-3 minutes on each side until golden brown and crispy.
- Remove churros, drain on paper towels, and roll in the cinnamon-sugar mixture.
