  • 1/2 cup Mayonnaise vegan mayo or Greek yogurt as alternatives
  • 1/4 cup Pineapple Juice use juice from canned pineapple
  • 2 tablespoons Apple Cider Vinegar
  • 2 teaspoons Sugar optional, adjust to taste
  • Salt and Pepper to taste

Step-by-Step Instructions
  1. Cook Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and rinse under cold water.
  2. Combine Ingredients: In a large mixing bowl, gently toss together the cooled pasta, diced pineapple, optional diced ham, red bell pepper, grated carrot, grated red onion, and sliced green onion.
  3. Prepare Dressing: In a separate bowl, whisk together the mayonnaise, pineapple juice, apple cider vinegar, and optional sugar until smooth. Adjust with salt and pepper as needed.
  4. Mix Dressing with Salad: Pour the creamy dressing over the salad mixture. Gently fold to coat everything evenly, being careful not to break the pasta or pineapple.
