- Preheat your oven to 400°F (200°C) and adjust the rack to the top shelf.
- In a large Ziploc bag, combine your chicken breasts with olive oil, cumin, chili powder, paprika, garlic powder, oregano, salt, and pepper. Seal the bag tightly and massage the mixture over the chicken. Allow it to marinate for at least 15 minutes, or refrigerate overnight.
- Heat a drizzle of olive oil in a cast-iron skillet over medium-high heat. Sear the marinated chicken breasts for 4-5 minutes on each side until golden brown.
- Remove the chicken from the skillet and set aside. In the same skillet, add chopped onion, tomato, and jalapeño. Sauté these vegetables for 2-3 minutes until softened.
- Return the seared chicken breasts to the skillet, spreading the sautéed vegetables over them. Gently pour the queso sauce all over the chicken, covering generously.
- Carefully transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the queso sauce turns golden brown.
- Once baked, let it cool slightly. Garnish with fresh cilantro and serve hot.
