Preparation
- Place the 2 lbs of boneless, skinless chicken breasts in your crockpot in a single layer.
- Sprinkle the seasonings: 1 tsp each of chili powder, cumin, paprika, garlic powder, and onion powder evenly over the chicken.
- Pour 1 cup of your chosen salsa over the seasoned chicken.
- Squeeze the juice of 2 limes over the chicken and salsa mixture, then pour in 1/2 cup of chicken broth.
- Cover the crockpot with its lid and set it to cook on low for 4-6 hours or on high for 3-4 hours.
- Once cooked, let the chicken rest for about 10 minutes, then shred the chicken directly in the crockpot using two forks or a stand mixer.
- Serve the shredded chicken mixture onto warm tortillas or over rice, adding toppings as desired.
