- In a large mixing bowl, beat 1 cup of softened butter and 1 cup of granulated sugar together until light and fluffy, about 3-4 minutes.
- Blend in 2 large eggs and 1 teaspoon of vanilla extract until well combined.
- In a separate bowl, whisk together 2 ½ cups of all-purpose flour and 1 teaspoon of baking soda. Gradually add this dry mixture to your creamed butter and sugar, mixing until just incorporated.
- Divide the dough into three equal portions. Leave one uncolored, then add red and green gel food coloring to the other two portions.
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Drop random pieces of the red, green, and white dough onto the sheet, mixing them up.
- Cover the dough with another sheet of parchment paper and gently press down to form an even layer about ¾-inch thick.
- Bake for 10-15 minutes or until the edges are lightly golden. Perform a toothpick test to check for doneness.
- Remove the bars from the oven and allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
- Once completely cool, spread a generous layer of buttercream frosting on top.
- Sprinkle colorful Christmas sprinkles over the frosted surface.
- Let the frosting set for a few minutes, then cut the bars into squares or rectangles.
