- Preheat the oven to 300°F (150°C).
- Whip the egg whites with a splash of vinegar until stiff peaks form (about 10-15 minutes).
- In another bowl, whisk the egg yolks, cottage cheese, baking powder, and vinegar until smooth.
- Carefully fold the yolk mixture into the egg whites until just combined.
- Pour the mixture into a greased 5"x9" loaf pan or spoon onto a baking sheet.
- Bake for approximately 50 minutes until golden brown; perform a toothpick test.
- Once baked, turn off the oven and let cool in there for about 10 minutes.
- Slice to desired thickness and serve warm or at room temperature.
