- Soak Pineapple: Soak the pineapple rings in a bowl with dark and coconut rums for at least 1 hour. Drain and pat dry.
- Prepare Coating: Set up shallow bowls with flour, whisked eggs & coconut milk, and coconut flakes for coating.
- Coat Pineapple: Dredge each ring in flour, coat in egg mixture, then press into coconut flakes until fully coated.
- Fry Pineapple: Heat oil to 350°F and fry coated rings in batches for about 1 minute per side until golden.
- Make Dipping Sauce: Beat cream cheese, add powdered sugar and a splash of reserved rum for creaminess.
