  • 3 tbsp mayo if using mayo instead
  • 1.5 tbsp Dijon for mayo mixture
For the Creamy Sauce
  • 1.5 tbsp butter olive oil can be a lighter alternative
  • 1.5 tbsp flour thickens the sauce
  • 1.25 cups milk almond milk can be used
  • 2 tbsp Dijon mustard adjust to your taste
  • 3 tbsp grated Parmesan cheese adds richness

Method
 

Step-by-Step Instructions
  1. Preheat oven to 375°F (190°C) and line a baking tray with parchment paper. Pound chicken to an even thickness of about ½ inch.
  2. Lay the flattened chicken on a clean surface. Place 2-3 slices of ham and 2 slices of Swiss cheese on each breast and fold over, securing edges.
  3. In a shallow bowl, combine either the egg and flour mixture or the mayo and Dijon mix. Dip the chicken in the mixture and coat in panko breadcrumbs.
  4. Place the breaded chicken on the baking tray and bake for 25-30 minutes until cooked through and golden brown.
  5. While chicken is baking, melt butter in a saucepan and whisk in flour to make a roux, then gradually add milk to thicken.
  6. Mix in Dijon mustard and grated Parmesan cheese into the sauce and season to taste. Cook for another 2-3 minutes.
  7. Once chicken is done, slice in half to reveal the filling and spoon creamy sauce over the top before serving.
