- Preheat oven to 375°F (190°C) and line a baking tray with parchment paper. Pound chicken to an even thickness of about ½ inch.
- Lay the flattened chicken on a clean surface. Place 2-3 slices of ham and 2 slices of Swiss cheese on each breast and fold over, securing edges.
- In a shallow bowl, combine either the egg and flour mixture or the mayo and Dijon mix. Dip the chicken in the mixture and coat in panko breadcrumbs.
- Place the breaded chicken on the baking tray and bake for 25-30 minutes until cooked through and golden brown.
- While chicken is baking, melt butter in a saucepan and whisk in flour to make a roux, then gradually add milk to thicken.
- Mix in Dijon mustard and grated Parmesan cheese into the sauce and season to taste. Cook for another 2-3 minutes.
- Once chicken is done, slice in half to reveal the filling and spoon creamy sauce over the top before serving.
