Method
 

Step-by-Step Instructions
  1. Blend the strawberries, blueberries, spinach, and carrots until smooth, then pour into a medium saucepan.
  2. Mix in applesauce, honey or maple syrup, lemon juice, and vanilla extract. Warm gently over low heat for about 5 minutes.
  3. Sprinkle gelatin powder evenly over the warm mixture. Let sit for 1 minute, then stir until completely dissolved.
  4. Let the mixture cool slightly for about 5 minutes, then pour into molds or a parchment-lined pan.
  5. Refrigerate to set for at least 2 hours until firm and chewy.
  6. Remove from molds and cut into shapes. Enjoy!
  7. Store in an airtight container in the refrigerator for up to a week.
