For the Chicken
  • 2 pieces Chicken Breast Can be substituted with tofu for a vegetarian version.
  • ¼ cup Honey (or Maple Syrup for Vegan) Adjust to taste based on preference for sweetness.
  • 2 tablespoons Soy Sauce (or Tamari for Gluten-Free) Use low-sodium soy sauce for a lighter option.
  • 2 tablespoons Fresh Lime Juice Freshly squeezed is preferred for flavor.
For the Avocado
  • 1 piece Avocado Use ripe avocados for best results.
For the Toppings
  • 1 piece Red Onion Finely chopped for best distribution.
  • 1 bunch Cilantro For fresh, complementary toppings.

Method
 

Directions
  1. Rinse 1 cup of sticky rice under cold water until the water runs clear. Combine with 1 ½ cups of water and cook according to package instructions. Fluff when cooked.
  2. In a saucepan, whisk ¼ cup honey, juice of 2 limes, and 2 tablespoons soy sauce over medium heat until it thickens slightly, about 5 minutes.
  3. Heat a grill or skillet over medium-high heat. Season 2 chicken breasts with salt and pepper, and cook for 6-7 minutes per side. Brush glaze over chicken in the last 2 minutes of cooking.
  4. Let chicken rest, then slice into strips. On a plate, layer warm sticky rice, avocado slices, and chicken strips. Drizzle with remaining glaze.
  5. Garnish with chopped red onion and cilantro before serving.
