  • 24 cookies Oreo Cookies Keep the filling for extra depth.
  • 1/2 cup Unsalted Butter Melted.
For the Filling
  • 8 oz Semisweet Chocolate Chop for easier melting.
  • 24 oz Cream Cheese At room temperature.
  • 1 cup Granulated Sugar
  • 1 cup Heavy Cream At room temperature.
  • 1/2 cup Unsweetened Cocoa Powder
  • 3 large Eggs
  • 1 large Egg Yolk
  • 1 teaspoon Peppermint Extract Essential for flavor.
For the Topping
  • 1 cup Chocolate Chips For ganache topping.
  • 1/4 cup Crushed Candy Canes For garnish.

Method
 

Steps
  1. Preheat oven to 325°F (163°C) and prepare a water bath.
  2. Crush Oreo cookies and combine with melted butter, press into springform pan.
  3. Melt semisweet chocolate until smooth.
  4. Beat cream cheese until smooth, then mix in sugar, heavy cream, and cocoa powder.
  5. Fold in eggs and peppermint extract, then add melted chocolate.
  6. Pour filling into crust, place in water bath and bake for 1 to 1.25 hours.
  7. Cool cheesecake in oven with door cracked for 45 minutes, then chill for at least 4 hours.
  8. Prepare ganache with heavy cream and chocolate chips, drizzle over cheesecake and garnish with crushed candy canes.
