  • 1 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 1 tablespoon Vanilla Extract

  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 1 tablespoon Cornstarch
  • 1/2 teaspoon Cream of Tartar
  • 1/2 cup Unsalted Butter Room temperature for mixing
  • 1/4 cup Water
  • 1 tablespoon Fresh Lemon Juice
For the Cobbler Topping
  • 2 cups All-Purpose Flour
  • 1 tablespoon Baking Powder
  • 1/2 teaspoon Salt
  • 1 tablespoon Granulated Sugar For dusting
  • 1 tablespoon Brown Sugar For dusting

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Lightly spray a 9x13 inch baking dish with non-stick spray.
  3. Combine the frozen peaches, granulated and brown sugars, extracts, cinnamon, nutmeg, cornstarch, cream of tartar, butter, water, and lemon juice in the baking dish. Toss together and cover with foil. Bake for 20 minutes.
  4. Mix together the flour, both sugars, baking powder, salt, and half the cinnamon. Cut in the cold butter until coarse crumbs form. Gradually stir in water until just combined.
  5. Spoon the cobbler topping over the baked peaches, sprinkle with remaining cinnamon sugar, and return to the oven. Bake for 30-45 minutes until golden brown.
  6. Let the cobbler cool slightly before serving. Enjoy warm with ice cream or whipped cream.
