- Preheat the oven to 375°F (190°C).
- Prepare the pie crust by placing it in a pie dish and pricking the bottom with a fork.
- Brown the ground beef in a skillet over medium heat for 5–7 minutes until fully cooked.
- Stir in taco seasoning, dried minced onion (or fresh onion), water, and salsa. Simmer for 2–3 minutes.
- Remove from heat and stir in 3/4 cup of cheddar cheese until melted.
- Spread refried beans on the bottom of the crust, then layer the beef mixture on top.
- Sprinkle crushed tortilla chips over the beef, and top with remaining 3/4 cup of cheddar cheese.
- Bake in the oven for 25–30 minutes until the crust is golden and cheese is bubbly.
- Let the Taco Pie rest for 10 minutes, then garnish with cilantro, lettuce, tomatoes, and sour cream.
