Step‑by‑Step Instructions
  1. Marinate the Chicken: Combine vegetable oil, minced garlic, grated ginger, soy sauce, and spices in a bowl. Add coconut milk and mix. Cut chicken thighs, coat them in marinade, cover, and refrigerate for at least 30 minutes.
  2. Soak the Skewers: Soak wooden skewers in water for about 30 minutes to prevent burning while cooking.
  3. Prepare the Cucumber Relish: In a bowl, mix vinegar, sugar, and salt. Slice cucumber, carrot, and shallot; add to the mixture along with chili if desired. Set aside.
  4. Cook the Chicken Satay: Heat a cooking pan over medium-high heat, add oil. Thread marinated chicken onto skewers and cook for 2-3 minutes on each side until charred and cooked through.
