Ingredients

  • 200 grams Chow Mein Egg Noodles Choose thin, fresh Hong Kong-style noodles.
For the Vegetables
  • 1 medium Yellow Onion Adds sweetness; shallots can be used.
  • 2 stalks Green Onions Use both tops and bottoms.
  • 100 grams Bean Sprouts Fresh preferred, canned in a pinch.
For the Cooking Oils
  • 1 tablespoon Corn Oil Neutral oil, can use canola.
  • 1 tablespoon Sesame Oil Adds a nutty aroma at the end.
For the Stir Fry Sauce
  • 2 tablespoons Dark Soy Sauce Rich color and flavor.
  • 2 tablespoons Regular Soy Sauce Essential for umami.
  • 1 tablespoon Oyster Sauce Adds savory richness.
  • 1 teaspoon Fish Sauce Omit for vegetarian version.
  • 1 teaspoon Granulated Sugar Balances flavors.
  • 50 ml Water Helps dissolve the sugar.

Method
 

Preparation Steps
  1. Bring a pot of water to a boil and soak the chow mein egg noodles for 30 seconds to 1 minute. Drain and set aside.
  2. In a small bowl, whisk together the dark soy sauce, regular soy sauce, oyster sauce, fish sauce, granulated sugar, and water until the sugar dissolves.
  3. Heat a wok over medium-high heat, add corn oil, and sauté sliced yellow onion and white green onion parts for about 1 minute. Remove and set aside.
  4. Add another tablespoon of corn oil to the wok, spread the drained noodles evenly, and fry for about 2 minutes until crispy and golden.
  5. Return the sautéed onions, add green onion tops, fresh bean sprouts, and stir fry sauce. Toss for 1-2 minutes until well combined.
  6. Drizzle sesame oil over the top and serve immediately while hot.
