- Preheat your oven to 175°C (350°F) and grease a loaf or bundt pan generously. Line the bottom with parchment paper.
- Mash the overripe bananas in a large mixing bowl until smooth and creamy.
- In a separate bowl, combine melted butter (or coconut oil), granulated sugar, eggs, and vanilla extract and whisk until smooth.
- Sift together the all-purpose flour, unsweetened cocoa powder, baking powder, and baking soda into another bowl.
- Gradually fold the dry mixture into the wet ingredients, using a spatula to combine gently.
- Fold in the smooth mashed bananas and chopped dried plums until evenly distributed in the batter.
- Pour the batter into the prepared pan and bake for 50–60 minutes, until a toothpick inserted comes out clean.
- Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
