  • 3/4 cup Feta cheese Crumbled; can substitute with goat cheese or ricotta
  • 2 cloves Garlic Freshly minced
For Cooking
  • 2 tablespoons Olive oil Extra-virgin, for sautéing
  • 2 tablespoons Lemon juice Fresh
  • to taste Salt
  • to taste Black pepper
  • to taste Paprika Smoked paprika adds depth

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Cut a pocket into each salmon fillet, being careful not to slice all the way through.
  3. Heat olive oil in a skillet and sauté minced garlic for 1 minute until fragrant.
  4. Add sun-dried tomatoes and fresh spinach to the skillet, cooking for 2-3 minutes until wilted.
  5. Remove from heat and mix in crumbled feta cheese until creamy.
  6. Stuff the salmon pockets with the spinach and feta mixture.
  7. Drizzle olive oil over the stuffed salmon and season with salt, black pepper, and paprika.
  8. Bake the salmon for 15-18 minutes until it flakes easily with a fork.
  9. Remove from the oven and squeeze fresh lemon juice over each fillet before serving.
