- Preheat your oven to 400°F (200°C) while you prepare your ingredients.
- Roll out your pizza dough until it is about 1/8 inch thick. Slice the dough into 4x4 inch squares.
- Place a generous amount of shredded mozzarella cheese in the center of each dough square. Layer on your choice of toppings.
- Fold the dough over the filling to form a pocket and seal the edges with a fork.
- Lightly coat the tops of each pizza pocket with olive oil and sprinkle with Italian seasoning.
- Bake in the preheated oven for 15 to 20 minutes or until golden brown.
- Let them cool for a few minutes, and optionally garnish with fresh basil or Parmesan cheese before serving.
