Baking Instructions
  1. Preheat the oven to 350°F (175°C) and prepare a 9x5-inch loaf pan.
  2. Whisk together the dry ingredients: 2 cups of flour, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt.
  3. In a large bowl, combine 1 cup of granulated sugar and the zest of 2 lemons, then mix in 1 cup of yogurt, 1/2 cup of oil, 3 eggs, 1/4 cup of lemon juice, and 1 teaspoon of vanilla extract.
  4. Gradually mix in the dry ingredients with the wet, stirring gently until just combined.
  5. Pour the batter into the prepared loaf pan and bake for 50-55 minutes.
  6. Allow the loaf to cool in the pan for about 10 minutes, then transfer to a wire rack.
  7. Mix 1 cup of powdered sugar with 2-3 tablespoons of lemon juice to prepare the glaze.
