Method
 

Preparing Birria Tacos
  1. Prepare Chili Paste by removing stems and seeds from dried chiles. Soak in boiling beef stock for 15-20 minutes, then blend with other ingredients until smooth.
  2. Sear the Beef by heating olive oil, seasoning the beef, and searing chunks until golden brown.
  3. Make the Sauce by sautéing onion, adding chili paste, and beef stock, then returning seared beef to pot.
  4. Braise the Beef in the oven for 2 ½ hours until fork-tender. Shred the beef into the sauce.
  5. Assemble Tacos by dipping tortillas in consomé, frying, and filling with beef, onion, and cheese.
  6. Serve tacos alongside warm consomé for dipping, garnished with cilantro and pico de gallo.
