Preparing Birria Tacos
- Prepare Chili Paste by removing stems and seeds from dried chiles. Soak in boiling beef stock for 15-20 minutes, then blend with other ingredients until smooth.
- Sear the Beef by heating olive oil, seasoning the beef, and searing chunks until golden brown.
- Make the Sauce by sautéing onion, adding chili paste, and beef stock, then returning seared beef to pot.
- Braise the Beef in the oven for 2 ½ hours until fork-tender. Shred the beef into the sauce.
- Assemble Tacos by dipping tortillas in consomé, frying, and filling with beef, onion, and cheese.
- Serve tacos alongside warm consomé for dipping, garnished with cilantro and pico de gallo.
