  • 2 cups Potato Gnocchi Soft and pillowy base
  • 2 tablespoons Olive Oil For sautéing
  • 1 pound Italian Sausage Savory flavor, can swap for plant-based
  • 1 medium Yellow Onion Diced
  • 2 cloves Garlic Minced
For the Sauce
  • 1 cup Butternut Squash (fresh or frozen) Adds creaminess
  • 1 can Crushed Tomatoes Canned for convenience
  • 1/2 cup Butternut Squash Puree Or pumpkin/sweet potato puree
  • 2 cups Chicken Broth Can use vegetable broth for vegetarian
  • 1/2 cup Skim Milk Dairy-free alternatives can be used
  • 2 tablespoons Fresh Sage Or dried sage
For the Greens and Toppings
  • 2 cups Kale or Spinach (fresh or frozen) Can be omitted
  • 1 cup Mozzarella Cheese Shredded
  • 1/2 cup Parmesan Cheese Grated
  • to taste Coarse Salt & Fresh Ground Pepper

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and gather your ingredients.
  2. Drizzle a tablespoon of olive oil over medium heat in your pot and brown the Italian sausage for about 5 minutes.
  3. Add the diced onion and sauté for 3-4 minutes, then stir in minced garlic for another 30 seconds.
  4. Introduce butternut squash and kale or spinach, sautéing for about 4-5 minutes until softened.
  5. Pour in crushed tomatoes, squash puree, chicken broth, skim milk, and sage, bringing to a boil then simmering for 5 minutes.
  6. Stir in potato gnocchi and simmer for 2-3 minutes, allowing the gnocchi to absorb some sauce.
  7. Remove from heat and mix in half of the mozzarella and parmesan cheeses.
  8. Sprinkle remaining mozzarella and parmesan on top and bake for 15-20 minutes until bubbly and golden.
  9. Let cool for a few minutes before serving and optionally garnish with fresh herbs.
