- Preheat your oven to 400°F (200°C) and gather your ingredients.
- Drizzle a tablespoon of olive oil over medium heat in your pot and brown the Italian sausage for about 5 minutes.
- Add the diced onion and sauté for 3-4 minutes, then stir in minced garlic for another 30 seconds.
- Introduce butternut squash and kale or spinach, sautéing for about 4-5 minutes until softened.
- Pour in crushed tomatoes, squash puree, chicken broth, skim milk, and sage, bringing to a boil then simmering for 5 minutes.
- Stir in potato gnocchi and simmer for 2-3 minutes, allowing the gnocchi to absorb some sauce.
- Remove from heat and mix in half of the mozzarella and parmesan cheeses.
- Sprinkle remaining mozzarella and parmesan on top and bake for 15-20 minutes until bubbly and golden.
- Let cool for a few minutes before serving and optionally garnish with fresh herbs.
