Preparation Steps
  1. Preheat your oven to 375°F (190°C) and spray a mini muffin pan with cooking spray.
  2. Combine milk and vinegar in a bowl and let sit for 5 minutes to create buttermilk.
  3. Whisk the oil and egg into the buttermilk mixture until combined.
  4. In another bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  5. Gradually add the wet mixture to the dry ingredients, stirring just until combined.
  6. Fill each muffin well about two-thirds full with the batter.
  7. Bake in the preheated oven for 8 minutes until puffed and golden.
  8. Cool in the pan for 1 minute, then transfer to a wire rack to cool completely.
