- Heat 1 tablespoon of olive oil and 2 tablespoons of butter in a large skillet over medium-high heat until melted and bubbly.
- Add chopped white button mushrooms and diced yellow onion to the skillet. Sauté for about 5-7 minutes until golden brown and fragrant.
- Remove the cooked mushrooms and onions from the skillet and set aside.
- In the same skillet, add more olive oil if needed and toss in zucchini chunks. Sauté for about 5 minutes until tender yet slightly crisp.
- Lower the heat, add minced garlic, Italian seasoning, and red pepper flakes. Stir and sauté for an additional 1-2 minutes until aromatic.
- Season with kosher salt and black pepper to taste, stir well, and serve hot.
