- Preheat your oven to 375°F (190°C) and lightly grease the baking dish.
- Mix ground beef, onion, breadcrumbs, barbecue sauce, egg, garlic powder, salt, and pepper in a bowl until just combined.
- Transfer the mixture to the baking dish and bake for about 25 minutes, until edges brown and center reaches 160°F (71°C).
- Prepare mashed potatoes as per instructions, mixing in half of the cheddar cheese and bacon bits if using.
- Spread the mashed potatoes over the meatloaf layer and sprinkle the remaining cheddar cheese on top.
