Method
 

Step-By-Step Instructions
  1. Preheat your oven to 375°F (190°C) and lightly grease the baking dish.
  2. Mix ground beef, onion, breadcrumbs, barbecue sauce, egg, garlic powder, salt, and pepper in a bowl until just combined.
  3. Transfer the mixture to the baking dish and bake for about 25 minutes, until edges brown and center reaches 160°F (71°C).
  4. Prepare mashed potatoes as per instructions, mixing in half of the cheddar cheese and bacon bits if using.
  5. Spread the mashed potatoes over the meatloaf layer and sprinkle the remaining cheddar cheese on top.
  6. Return to the oven and bake for another 15-20 minutes, until the cheese is bubbly and golden brown.
  7. Let the casserole cool for 5-10 minutes before serving. Garnish with chopped green onions or chives if desired.
