Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken thighs dry and season with salt, pepper, paprika, and garlic powder.
  3. Heat olive oil in a skillet and sear the chicken thighs skin-side down for 5 minutes.
  4. Flip the chicken and cook for another 2 minutes before removing from skillet.
  5. In the same skillet, add cubed potatoes, seasoning them with rosemary, salt, and pepper.
  6. Return chicken thighs to the skillet and roast everything in the oven for 25-30 minutes.
  7. Let the dish rest for a few minutes and garnish with fresh parsley before serving.
