Method
 

Cooking Instructions
  1. Preheat the Air Fryer to 400ºF (200ºC). Allow about 5 minutes for it to reach the desired temperature.
  2. Wash the russet potatoes thoroughly and cut into wedges, about 1/2 inch thick.
  3. In a bowl, toss the potato wedges with olive oil, garlic powder, paprika, kosher salt, and black pepper.
  4. Arrange the potato wedges in the air fryer basket in a single layer and air fry for 20-25 minutes, shaking the basket halfway through.
  5. Heat a skillet over medium heat and sauté the diced onion for about 3-4 minutes.
  6. Add minced garlic to the skillet and stir for an additional minute.
  7. Add ground beef to the skillet, breaking it up with a spatula, then mix in chili powder and cumin; cook until browned, about 8-10 minutes.
  8. Remove the potato wedges, sprinkle the seasoned ground beef over the top, and garnish with parsley.
  9. For the dip, roast garlic bulbs until softened, then blend with sour cream, mayonnaise, lemon juice, and red wine vinegar.
  10. Serve potato wedges topped with beef and the roasted garlic dip on the side.
