- Preheat the Air Fryer to 400ºF (200ºC). Allow about 5 minutes for it to reach the desired temperature.
- Wash the russet potatoes thoroughly and cut into wedges, about 1/2 inch thick.
- In a bowl, toss the potato wedges with olive oil, garlic powder, paprika, kosher salt, and black pepper.
- Arrange the potato wedges in the air fryer basket in a single layer and air fry for 20-25 minutes, shaking the basket halfway through.
- Heat a skillet over medium heat and sauté the diced onion for about 3-4 minutes.
- Add minced garlic to the skillet and stir for an additional minute.
- Add ground beef to the skillet, breaking it up with a spatula, then mix in chili powder and cumin; cook until browned, about 8-10 minutes.
- Remove the potato wedges, sprinkle the seasoned ground beef over the top, and garnish with parsley.
- For the dip, roast garlic bulbs until softened, then blend with sour cream, mayonnaise, lemon juice, and red wine vinegar.
- Serve potato wedges topped with beef and the roasted garlic dip on the side.
