  2. Prepare Noodles: In a separate pot, bring salted water to a boil. Add lo mein noodles and cook according to package instructions (about 4-5 minutes). Drain and toss with sesame oil to prevent sticking.
  3. Stir-Fry Vegetables: In the same skillet, drizzle in sesame oil. Add minced garlic and stir for 30 seconds, then toss in shredded carrots and red cabbage. Stir-fry for 2-3 minutes until tender but crisp. Add baby spinach or chopped bok choy and cook until wilted.
  4. Combine Noodles and Sauce: Whisk together soy sauce, oyster sauce, rice vinegar, sugar, and black pepper in a small bowl. Pour this mixture into the skillet and add the noodles. Toss to coat and heat through.
  5. Finish the Dish: Return potstickers to the skillet, gently mix with noodles and vegetables, and heat for 1-2 minutes. Garnish with sliced green onions and sesame seeds before serving hot.
