  • 1 teaspoon Basil Fresh preferred
  • 1/4 cup Grated Parmesan Cheese
For Seasoning
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 tablespoon Balsamic Vinegar Optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Slice a pocket into each chicken breast, ensuring not to cut all the way through.
  3. Sauté minced garlic in olive oil until fragrant for about 1 minute.
  4. Add chopped spinach to the garlic and cook until wilted, about 2-3 minutes.
  5. In a mixing bowl, combine garlic, spinach, roasted red peppers, mozzarella, Parmesan, oregano, basil, salt, and pepper.
  6. Stuff the chicken breasts with the mixture and secure the openings.
  7. Sear the chicken breasts in the skillet for 2-3 minutes on each side until golden brown.
  8. Transfer to a baking dish and bake for 20-25 minutes until the internal temperature reaches 165°F (74°C).
  9. Drizzle with balsamic vinegar before serving for added flavor.
