Method
 

Step-by-Step Instructions
  1. Preheat your grill or oven to 400°F (200°C).
  2. In a large mixing bowl, combine the ground beef, minced onion, garlic, ginger, and serrano chili. Add cilantro, mint, spices, baking soda, and oil. Mix thoroughly until sticky.
  3. Lightly oil hands and shape the mixture into long cylindrical pieces around the skewers. Place on a parchment-lined tray.
  4. Refrigerate the shaped kebabs for 15-20 minutes.
  5. Cook the kebabs on the grill or skillet for 10-12 minutes, turning occasionally and brushing with oil.
  6. Let the kebabs rest for a few minutes before serving hot with naan, chutney, or raita.
