  • 4 tablespoons low-sodium soy sauce or tamari for gluten-free
  • 1 tablespoon honey or agave syrup
  • 1 tablespoon sriracha adjust based on spice preference
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 tablespoon cornflour (cornstarch) or arrowroot powder
For the Stir Fry
  • 1 pound lean beef mince or ground turkey/chicken
  • 1 medium onion diced, yellow or white
  • 2 cups bell peppers any variety, sliced
  • 2 cups broccoli cut into small florets
  • 3 cloves garlic minced
  • 1 inch fresh ginger finely chopped or grated
  • 4 cups cooked rice jasmine or basmati
  • 2 tablespoons spring onions for garnish
  • 2 tablespoons toasted sesame seeds omit if unavailable

Method
 

Step-by-Step Instructions
  1. In a medium bowl, mix together the low-sodium soy sauce, honey, sriracha, rice vinegar, and cornflour until smooth and well-combined. Set aside.
  2. Chop all your vegetables and mince the garlic and ginger.
  3. Heat a large wok or skillet over medium-high heat and add the sesame oil. Once shimmering, add the lean beef mince and sauté for about 5-7 minutes until browned.
  4. If there's excess fat, drain it. Add minced garlic and ginger, stirring for about 30-60 seconds until fragrant.
  5. Add chopped onion and broccoli to the wok, stirring for 4-5 minutes until the onion is translucent.
  6. Toss in the sliced bell peppers and stir-fry for an additional 2-3 minutes.
  7. Pour the prepared sauce over the mixture and stir to coat well. Let simmer briefly.
  8. Bring the sauce to a bubble, stirring until it thickens, about 1-2 minutes. Serve over cooked rice and garnish.
