  • 30 leaves Fresh basil leaves, chopped Use dried basil in a pinch.

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Place the Alouette cheese in a baking dish, surround with tomatoes, drizzle with olive oil, and season with salt and pepper. Bake for 35 minutes.
  2. Boil salted water in a large pot. Add pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
  3. In a skillet, heat butter over medium-high. Season shrimp and cook about 2 minutes on each side until pink and opaque. Set aside.
  4. Mash roasted tomatoes and cheese together, then stir in basil, mozzarella, and pasta until combined.
  5. Fold sautéed shrimp into the pasta mixture and serve warm, garnished with parmesan and extra basil.
