Ingredients
  

For the Noodles
  • 8 oz Noodles egg, ramen, or gluten-free varieties
For the Beef Mixture
  • 1 lb Ground Beef or tofu, tempeh, or plant-based alternatives
  • 1 tbsp Vegetable Oil any neutral oil
  • 1 medium Onion or green onions/shallots
  • 2 cloves Garlic minced if fresh isn't handy
  • 1 tbsp Ginger fresh or ginger paste
For the Vegetables
  • 1 cup Carrots may substitute with quick-cooking vegetables
  • 1 cup Bell Pepper or snow peas/broccoli
For the Sauce
  • 1/4 cup Soy Sauce tamari or coconut aminos for gluten-free
  • 2 tbsp Oyster Sauce omit if vegetarian
  • 2 tbsp Hoisin Sauce can substitute with more soy sauce
  • 1 tbsp Brown Sugar or honey/maple syrup
  • 1 tsp Red Pepper Flakes/Chili Paste to taste
  • 1 tbsp Sesame Oil to prevent sticking
For the Garnish
  • 1 tbsp Sesame Seeds
  • 2 scallions Green Onions sliced for garnish

Method
 

Cooking Steps
  1. Cook your choice of noodles according to package instructions for about 4-6 minutes until al dente, then drain and rinse under cold water.
  2. In a large skillet, heat vegetable oil over medium-high heat. Add ground beef and cook for 5-7 minutes, breaking it apart until browned. Drain excess fat.
  3. Lower heat and add chopped onion to the skillet. Sauté for 2-3 minutes until translucent, then add garlic and ginger, cooking for another minute.
  4. Add sliced carrots and bell peppers; stir-fry for 2-3 minutes until tender-crisp.
  5. In a bowl, combine soy sauce, oyster sauce, hoisin sauce, sesame oil, brown sugar, and red pepper flakes. Whisk until mixed.
  6. Add cooked noodles into the skillet with beef and veggies. Pour sauce over and toss to coat evenly, stir-frying for another 2-3 minutes.
  7. Remove from heat and serve garnished with sesame seeds and sliced green onions.
