  • 4 cups Fresh Spinach sauté until wilted
  • 1 cup Feta Cheese crumbled
  • 1 cup Shredded Cheese a blend of mozzarella and cheddar
  • 1 tablespoon Olive Oil for sautéing
  • 1 teaspoon Garlic Powder or replace with fresh garlic
Optional Add-ins
  • 1 cup Bell Peppers diced
  • 1 cup Onions sautéed
  • 1 avocado Avocado sliced
  • 1 cup Salsa mild or spicy, based on preference

Method
 

Step‑by‑Step Instructions
  1. Preheat a non-stick skillet over medium heat for about 2-3 minutes.
  2. Drizzle olive oil in the skillet, add fresh spinach, and sprinkle with garlic powder. Sauté for 2-3 minutes until wilted.
  3. Remove skillet from heat. Layer crumbled feta, sautéed spinach, and shredded cheese on a tortilla, then top with another tortilla.
  4. Return skillet to medium heat, cook one assembled quesadilla for about 3-4 minutes until golden brown, then flip and cook for another 3-4 minutes.
  5. Remove quesadilla from skillet, let it rest for a minute, and slice into wedges. Serve warm with salsa or avocado.
