  • 2 tablespoons Ground Flaxseed Or chia seeds for thickness
  • 1 cup Old-Fashioned Rolled Oats Do not use instant oats
For the Fruit
  • 1 cup Strawberries Fresh or frozen
For the Topping
  • ¼ cup Cashews Soak for softer texture

Method
 

Preparation Steps
  1. In a medium-sized mixing bowl, combine Greek yogurt, honey, lemon juice, vanilla extract, and fine sea salt. Whisk until smooth.
  2. Fold in rolled oats and flaxseed into the yogurt mixture until thoroughly combined.
  3. Layer half of the sliced strawberries on top of the oat mixture.
  4. Cover and refrigerate overnight or at least for 4 hours.
  5. Preheat the oven to 350°F. Spread cashews on a baking sheet and roast for 5-8 minutes.
  6. Stir the mixture before serving and top with roasted cashews and remaining strawberries.
