- In a medium-sized mixing bowl, combine Greek yogurt, honey, lemon juice, vanilla extract, and fine sea salt. Whisk until smooth.
- Fold in rolled oats and flaxseed into the yogurt mixture until thoroughly combined.
- Layer half of the sliced strawberries on top of the oat mixture.
- Cover and refrigerate overnight or at least for 4 hours.
- Preheat the oven to 350°F. Spread cashews on a baking sheet and roast for 5-8 minutes.
- Stir the mixture before serving and top with roasted cashews and remaining strawberries.
