- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Combine honey and ground cinnamon in a small bowl until well blended.
- Unroll the phyllo dough and layer four sheets on top of each other, brushing each with melted butter.
- Spread the honey-cinnamon mixture over the top sheet, and sprinkle chopped nuts if using.
- Roll the phyllo dough tightly starting from the short end and place seam side down on the baking sheet.
